For the Chicken
- 2 Boneless, skinless chicken breasts
- 0.25 cup Dijon mustard
- 2 tablespoons Honey
- 1 tablespoon Olive oil
- 2 cloves Garlic minced
- 0.5 teaspoon Paprika
- to taste Salt and black pepper
For the Roasted Asparagus
- 1 bunch Asparagus trimmed
- 1 tablespoon Olive oil
- 0.5 teaspoon Garlic powder
- to taste Salt and pepper
- 0.5 cup Mozzarella cheese shredded
- 0.25 cup Parmesan cheese grated
Preheat oven to 400°F (200°C).
In a bowl, whisk together Dijon mustard, honey, olive oil, garlic, paprika, salt, and black pepper.
Add the chicken breasts to the marinade and coat well. Let sit for at least 10 minutes or refrigerate for up to 2 hours.
Place the trimmed asparagus on a baking sheet. Drizzle with olive oil, sprinkle with garlic powder, salt, and pepper, and toss to coat.
Place the marinated chicken on a separate baking dish or beside the asparagus if space allows.
Bake for 20–25 minutes, until the chicken is cooked through and reaches 165°F (74°C) internally.
In the last 5 minutes of baking, sprinkle mozzarella and Parmesan over the asparagus and return to the oven until melted.
Let the chicken rest for a few minutes before serving. Serve warm with cheesy asparagus on the side.
