Ingredients
  

For the Chicken

  • 2 Boneless, skinless chicken breasts
  • 0.25 cup Dijon mustard
  • 2 tablespoons Honey
  • 1 tablespoon Olive oil
  • 2 cloves Garlic minced
  • 0.5 teaspoon Paprika
  • to taste Salt and black pepper

For the Roasted Asparagus

  • 1 bunch Asparagus trimmed
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Garlic powder
  • to taste Salt and pepper
  • 0.5 cup Mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a bowl, whisk together Dijon mustard, honey, olive oil, garlic, paprika, salt, and black pepper.
  • Add the chicken breasts to the marinade and coat well. Let sit for at least 10 minutes or refrigerate for up to 2 hours.
  • Place the trimmed asparagus on a baking sheet. Drizzle with olive oil, sprinkle with garlic powder, salt, and pepper, and toss to coat.
  • Place the marinated chicken on a separate baking dish or beside the asparagus if space allows.
  • Bake for 20–25 minutes, until the chicken is cooked through and reaches 165°F (74°C) internally.
  • In the last 5 minutes of baking, sprinkle mozzarella and Parmesan over the asparagus and return to the oven until melted.
  • Let the chicken rest for a few minutes before serving. Serve warm with cheesy asparagus on the side.
