- 2 whole Unripe Green Mangoes julienned using a Y-peeler
- 1 small Red Onion thinly sliced with a mandolin
- 1 medium Carrot shredded or julienned
- 4 tablespoons Fresh Cilantro roughly chopped
Dressing
- 2 tablespoons Fish Sauce or vegan substitute
- 2 tablespoons Fresh Lime Juice from about 1 lime
- 2.5 tablespoons Brown Sugar adjust to taste, start with 2 tbsp
- 1 clove Garlic grated
- 2 pieces Thai Red Chilies finely chopped, adjust to taste
